Job Title: Head Bartender / Bartender

The Role: We are seeking an energetic and skilled Bartender / Head Bartender to create an inviting and enjoyable atmosphere for our guests. You will be responsible for crafting delicious drinks, providing exceptional customer service, and ensuring smooth bar operations. Whether mixing classic cocktails, recommending local wines, or keeping the bar well-stocked and organised, you will play a key role in enhancing our guests’ experience at Mount Hart Wilderness Lodge.

Key Responsibilities:
Guest Experience: Serve drinks with professionalism and warmth, creating a welcoming environment for guests to relax and socialise.
Cocktail & Beverage Service: Prepare and serve a variety of drinks, including classic cocktails, beer, wine, and non-alcoholic beverages.
Bar Operations: Maintain an efficient and organised bar, including stock management, inventory control, and cleanliness.
Customer Engagement: Offer recommendations and share stories with guests, enhancing their experience at the lodge.
Quality Control: Ensure all drinks are made to high-quality standards and in compliance with liquor licensing regulations.
Team Collaboration: Work closely with the lodge team to ensure seamless service, assist with events, and contribute to the overall guest experience.
Leadership (for Head Bartender role): Train and mentor junior bar staff, oversee daily bar operations, and assist in menu planning and stock ordering.
Qualifications and Requirements:
Previous experience as a bartender, bar supervisor, or in a hospitality role.
Strong knowledge of cocktails, beer, wine, and spirits.
Exceptional customer service skills with a friendly and engaging personality.
Ability to work independently and as part of a team in a remote environment.
Responsible Service of Alcohol (RSA) certification (or willingness to obtain).
Strong organisational skills and attention to detail.
Willingness to work flexible hours, including split shifts, evenings, weekends, and holidays.
(For Head Bartender role) Experience in stock management, team leadership, and training staff is desirable.

About Us: Mount Hart Wilderness Lodge is a unique and highly remote outback destination in the Kimberley region. We’re looking for an experienced Head Chef to lead our kitchen and deliver high-quality meals at Pippa’s Corner, a premium restaurant that serves three-course meals, and Uncle Tony’s Jungle Bar, an al fresco bar that offers casual al la carte dining.
The Role: As Head Chef, you’ll oversee the kitchen operations and ensure every meal meets our high standards. You’ll be responsible for preparing dishes for our restaurant, bar and tour guests while maintaining the relaxed, authentic vibe of Mount Hart.
Key Responsibilities:
Develop and deliver menus for Pippa’s Corner, Uncle Tony’s Jungle Bar, staff meals and tour experiences.
Oversee day-to-day kitchen tasks, including food prep, presentation, and service.
Lead the kitchen team, ensuring efficient rostering, consistency, and quality.
Maintain food safety and hygiene standards, ensuring everything meets health and safety regulations.
Handle food sourcing, stock control, and supplier relationships to keep ingredients fresh and available.
Control kitchen budgets, reduce waste, and ensure efficient use of resources.
Work closely with other teams to create great dining experiences for our guests.
Qualifications and Requirements:
Formal culinary training or equivalent experience.
At least 3-5 years in a Head Chef role, ideally in a remote environment.
Experience managing and developing a kitchen team.
Strong understanding of menu planning, food safety, inventory, and budgeting.
A passion for fresh, local ingredients and new ideas for the menu.
Interest in sustainable food practices and respect for the Kimberley region.

Demonstrated ability to manage infrastructure and landscaping projects including strong trade knowledge (plumbing, electrical and mechanical) to cost effectively manage ongoing maintenance.

About Us: Mount Hart Wilderness Lodge is a unique and highly remote outback destination in the Kimberley region. We’re looking for an experienced pilots to join our airwing operation for the 2025 dry season.
The Role: As a Line Pilot, you will take Mount Hart guests on incredible adventures across the breathtaking West Kimberley region. Scenic helicopter tours include off-airport landings in spectacular Kimberley destinations.
As a Base Manager, you will manage helicopter maintenance and ensure the airwing operation runs seamlessly throughout the season.
All Line Pilots and the Base Manager will fly R44 aircrafts, ensuring the highest standard of safety, customer service, and professionalism.

Working alongside the Groundskeeper, this role will also ensure the general maintenance of grounds infrastructure through ongoing repairs and maintenance.
Key Responsibilities:Maintain the lodge's grounds and oasis gardens to impeccable standards.
Utilise expertise in gardening, including planting, pruning, and soil management whilst operating within the guidelines of national park requirements.
Manage and maintain irrigation systems.
Work closely with the Groundskeeper to upkeep grounds infrastructure, including ongoing repairs and maintenance.
Ensure compliance with safety and environmental standards in all grounds maintenance activities.
Qualifications and Requirements:
Experience with grounds maintenance, gardening, and landscaping.
Experience with general repairs and maintenance of grounds infrastructure.
Strong understanding of irrigation systems, garden equipment and tooling.
Knowledge of plant care, soil management, and pest control.
Strong attention to detail and commitment to maintaining high standards.

PRE-REQUISITES FOR EMPLOYMENT
Positive attitude with a willingness to work as an all-rounder.
Full-season availability (late April to late September).
Own accommodation preferred (tent or caravan). Rent applies if accommodation is provided by Mount Hart Wilderness Lodge.
Own car (4WD recommended). Diesel fuel can be purchased at Mount Hart.
Meals are provided by Mount Hart (breakfast, lunch, and dinner provided for a $20 per day charge).
Staff work a 6 weeks on, 1 week off rotation (alternating between 5-day and 6-day work weeks).
Travel costs not included. Staff must arrange their own travel to Mount Hart.
Desired: People with additional talents – musicians, entertainers, trade backgrounds.
